Back to the Beginning by Alfredo "Freddy" Arredondo, Winemaker Our May 2011 Wine Club Shipment will bring us back to the beginning so to speak. When Cave B Estate Winery started out we only produced four varietals of wine; Cabernet Sauvignon, Merlot, Semillon, and Chardonnay. In this shipment you’ll receive three of the four original Cave B varietals.These wines have evolved in style and character from those first few vintages and in their evolution I have learned not only how to work with our fruit to make the best wine possible, but I have fallen in love with it for all it has to offer me as a winemaker. It is unique in character with complex rich flavors and beautifully balanced acidity that works tremendously well with food. The 2008 Cabernet Sauvignon offers both generous amounts of ripe dark fruits, and lively fresh red fruit aromas (contributed by the 14% Merlot addition), along with earthy and even spicy notes of cardamom, cinnamon, cassis, leather, and tea leaves. It has a nice amount of structure making it a great wine to accompany hearty red meats. The 2008 Merlot is a beautiful wine offering elegant structure bolstered with a judicious 6% addition of Cabernet Sauvignon. The initial aroma and flavor bring on a ripe red fruit character followed by some intensity and structure with a lively balanced acidity that make this wine wonderful on its own, but even better when paired with food.
